Pizza Boats
Ingredients
4 large organic golden potatoes (any potato works but this is my fave!)
Sauce:
1/2 cup pure tomato paste (find one without additives, just tomatoes only)
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon raw honey
1/4 cup water
Topping choices:
vegan cheese - click for recipe
Cut up spinach ribbons
cherry tomatoes or just chopped tomatoes
sundried tomatoes
raw or cooked onions
raw or cooked mushrooms
raw chives
raw chopped basil (my fave!)
Directions:
Pierce and bake your potatoes at 400 degrees in the oven for 45min. to an hour. When you squeeze them and they are soft they are done. You can cut in half before baking and cut your time in half.
While the potatoes are roasting, make the tomato sauce by whisking together the tomato paste, seasonings, raw honey, and 1/4 cup water. Set aside.
When the potatoes have cooled down cut in half and scoop out middle. Mix the potato filling with some vegan cheese if you have some prepared and then place back in the potato with the other toppings. If not using the cheese just save for a snack later.
Apply your sauce and the rest of your ‘chosen’ toppings - set aside the greens if you want to keep them raw and apply when your done with next step.
Place the potatoes back in the oven and roast for 15 to 20 minutes, until the toppings are cooked through. Serve immediately. Makes 2 to 3 servings.
