Pizza with Potato Crust
This can be achieved with white or sweet potatoes
Just when you thought pizza was out of your life…. BAM! Here it is! The best part? You can eat as much as you want cuz it’s super healthy for you! woohoo!
Ingredients
For the crust
2 sweet potatoes or white potatoes , peeled and diced. This will make 1 medium size pizza.
3 tbsp cassava flour,
3 Tbsp potato starch (sometimes I skip the cassava and just use potato starch only, but it makes a looser dough) You can add more flour or starch as you go along.
1/2 tsp dried oregano
1/2 tsp sea salt

Marinara sauce:
1/3 cup tomato paste
1/2 tsp dried oregano
1/2 tsp dried thyme
2-3 tbsp water
Sea salt and pepper, to taste
In a hurry? Just reach for the bottled Pizza Sauce or other ‘safe’ brand. (warning: most bottled pizza sauce has oil in it.)
Topping suggestions:
red onion, finely sliced
cherry tomatoes, halved
red bell pepper, diced
olives
small zucchini,
sliced Handful of fresh arugula or spinach
Handful of fresh basil (oh lawd!)
Directions:
Preheat oven to 400F.
Place the diced sweet potatoes in a steamer. Cover with a lid and steam for 10-15 minutes, until tender. Remove and cool
Place the sweet potatoes in a bowl and mash with a fork or potato masher until smooth.
Add in the potato starch and flour, dried oregano and sea salt. Add any extra flour or starch to make uniform and doughy. Set aside.
Make the marinara sauce by combining the tomato paste, dried oregano, dried thyme, water sea salt and black pepper in a bowl and whisking until mixed.
Prepare a baking sheet lined with parchment paper and place the dough on top. Using your hands, spread the dough to 1/4 inch thickness.
Bake in the oven for 20 minutes, until hardened on top. flip and cook for a few more minutes. You may need to flip and peel off the parchment slowly. Patience is a virtue.
Top the pizza with the marinara sauce and your choice of toppings.
Bake for another 10 minutes, until browned on the edges. Add fresh arugula or basil and serve immediately. Makes 1 pizza
Don’t worry about sounding professional. Sound like you. There are over 1.5 billion websites out there, but your story is what’s going to separate this one from the rest.
