Potato & Peas, Please
Have you ever just wanted a big hug from your food? This is a “hug in a bowl”. Two of my favorite foods buddy up in this dish. It’s super fast and super easy. You can eat this by itself or pour over a bed of greens massaged in lemon juice if you need to get your greens in for the day. Zinc and L-Lysine from the potatoes and protein, fiber and omega 3 fats from the peas make this a healing powerhouse.
Ingredients
4 medium or 8 small potatoes (any potato will work but yellow is my fave)
1 lb. bag of frozen peas
1/2 tsp. garlic powder
1/2 tsp. onion powder
pinch of salt if desired
black pepper to taste
Directions:
Dice up the potatoes into 1/2 “-1” chunks and place in pressure cooker or steamer with a little water. Pour in the whole pkg. of sweet peas. Stir in spices if using. Pressure cook for 5 min and then quick release. or steam for 10 min. or until potatoes or tender and break a little when stirred. Stir up until juices are a little thickened and serve.
