Potato Waffles
I love ‘one’ ingredient recipes! You can use these for a sweet treat in the mornings topped with maple syrup or you can use them as a savory side with some white country gravy.
Ingredients:
2 large steamed potatoes cooled. (peel or no peel, you decide)
tip: This works better with cold potatoes taken from fridge.
Directions:
Pre-heat the waffle iron on high setting and wait until iron is ready. Meanwhile, mash the potatoes with a fork and add any seasonings at this point. Spoon mashed potatoes into iron and close. This process is the hardest cuz it takes around 10 to 15 minutes for them to brown and set. So get your maple syrup ready, along with your blueberries and wipe the saliva off of your lips. It’s worth every savory minute.
