Spinach Soup


DO NOT ‘snarl’ your nose up at this one! I know it sounds kinda icky but you will NOT regret working this baby into your diet. First of all, it’s a cinch to make, and second of all, It will heal your little body like nothing else. Remember Popeye the sailor man? You too can be strong to the finish!

Ingredients

  • 1-pint grape tomatoes

  • 1 stalk celery - rough chopped

  • 1 garlic clove - skin removed

  • 1 orange - peeled

  • 4 cups baby spinach

  • 2 basil leaves or a few sprigs of cilantro

  • 1⁄2 avocado (optional)

Directions:

Blend the tomatoes, celery, and garlic with the juice of 1 orange until smooth. Add the spinach by the handful until completely incorporated. Add the basil and the avocado (if desired), and blend. Serve and enjoy immediately!


This is raw soup intended to be served at room temperature. It should not be heated.

Personally - I love this soup served over a bed of cucumber noodles or zucchini noodles. I’ve even had it on top of some baked potato wedges or some potato noodles.
