Stewed Okra


I grew so much okra this past summer that I had to find different ways of preparing it. This has to be my ‘all time’ favorite okra recipe. You just can’t beat the tomato/okra combination and then when you add that healing potato… OH MY!

Ingredients

4 medium tomatoes cut in quarters

½ onion cut in quarters

3 whole cloves of garlic

30-40 okra (cut off stems and cut into rounds) Note: the stems will cook soft if you want to leave on.

1 tsp. Himalayan salt

½ tsp black pepper (if not sensitive)

Pinch of cayenne

2 whole Potato cut in quarters (set aside)

Directions

You don’t need a pressure cooker for this recipe but it makes things much quicker. You can do this over stove top and just sauté in pot or you can slow cook it in a crock pot.

These directions are for a pressure cooker. Place the tomatoes, onions, garlic, seasonings in the food processor and process until desired size of tomatoes are reached. (If not using a pressure cooker just simmer on stove for approx. 15-20 minutes until everything is tender.

Pour into the pressure cooker and top with the tomatoes Place the okra and potatoes into pressure cooker as well.

Pressure cook on high for 3 minutes and let it release slowly.

Take the potatoes out and mash up in bowl or plate and pour the stewed okra over the potatoes.

This quantity serves 2 very hungry adults or a ‘normal’ family of four.

Other versions:

Dice the potatoes up and just mix into the pressure cooker or pot and incorporate the pieces into the stew.

Bake the potatoes separate and then pour the stew over them when done.

I like to pour the stew over fresh greens for a super energy boost!
