Sweet Potato Brownies


Before you go throwing stones, you have to try these at least ONCE! Keep in mind…the healthier the brownie the more you can eat!

Ingredients

3 cups cooked and mashed sweet potatoes (skins removed)

2 cups almond butter

¼ C + 2 tbsp. carob powder. what’s carob?

1 banana or flax-egg (2 tbsp flax meal with 6 TBSP water and set for 5 min. until thick)

¼ C maple syrup

2 tsp. vanilla – alcohol-free or use 1 of a vanilla bean

2 tsp. cinnamon

2 tsp. baking soda

Directions

Preheat oven to 350F.

Mix all ingredients into a bowl.

Pour mixture into a parchment-lined pan – I used 8x12 And bake for 25 minutes. Let cool for 30min. before cutting. Some people like to use an 8x8 pan but they will be thicker so I would allow more baking time.
