Nice Cream
When I explain to people how dairy products can wreak havoc on our inflamed bodies they usually say this “but I love ice cream”. I give them this alternative and they LOVE IT! The best part about this? There is no limiting yourself on the amounts. Eat as much as you want and heal that digestive system! woohoo! NOTE: At the bottom of the page there are some awesome ideas to send this dessert ‘over the top’.
Ingredients
4 frozen bananas (I like to cut my bananas in 1-2” pieces and bag them before freezing)
Optional: 1/4 cup of water
Directions
To make the ice cream, cut each frozen banana into 3 to 4 pieces.
Place all of these pieces into a food processor and pulse to combine.
After pulsing a few times, begin to process continually while adding water by the tablespoon as needed until a thick, creamy, smooth texture is achieved.
It’s ready to eat or you can store in a freezer-safe bowl until ready to eat. Here are some topping ideas:
Cinnamon mixed with date sugar
Raw Honey
NOTE: You can always mix in your choice of fruit during the mixing phase to achieve different flavors. Vanilla bean is always a good option as well.
