Festive Sweet Potatoes


Are you scared of the starch and healthy glucose packed into a sweet potato? Well, don’t be….Their glucose is magic to your body and delivers phenomenal gut and intestinal health to your body. The unlikely combination of these 2 powerhouses (Sweet potatoes and Cabbage) was a fantastic surprise to my tastebuds. I adapted this recipe from MedicalMedium.com but I added some festive twists!

 

Ingredients

4 large sweet potatoes

4 cloves of garlic minced

1 med. onion- diced

1 red cabbage head- diced (you can dice big or small, your choice)

1/2 tsp. Himalayan salt

For the finishing sauce: optional

1 lemon

1/2 C honey

1/2 tsp salt

pinch of cayenne

1/2 C Cilantro - diced

Directions

Bake sweet potatoes (leaving the skin on) - place in the oven at 425 degrees and place potatoes on a baking sheet. DO NOT cover with aluminum and DO NOT rub oil on them. They are perfectly capable of baking without all these toxins and fats. Cook 30 minutes and then turn over and cook approx. 30 more minutes. Squeeze the potatoes for doneness. If they have ‘give’ in the middle then they are soft inside. set aside.

NOTE: I like to pressure cook my potatoes in a pressure cooker. I cook for about 25 minutes and then let the pot slow-release its pressure.

While the Potatoes are cooking get your cabbage mix prepared. place cabbage/onions/garlic and salt in a skillet with water (about 1/4 C)stir and cover. Watch closely and don’t let the water totally evaporate. Add more if needed. When the veggies are soft turn off the heat.

While your veggies are simmering you can be making the drizzle sauce.

In a small bowl squeeze the lemon juice from the lemon and pour in the honey, salt, and cayenne. Mix and set aside.

Now we get to assemble this awesome masterpiece!

Slice the potatoes down the middle lengthwise, open up and spoon your veggie mixture in. Top with the desired amount of chopped cilantro and drizzle with honey sauce.

This recipe is totally fat-free! And it’s full of flavor! Remember: When you are trying to heal your liver the more fat-free meals you eat the faster you will heal! woohoo!
