Ranch Dressing


With fat-free option

Have you ever felt a little guilty about eating too much ranch or maybe you like ranch on everything but don’t like the ‘bad stuff’ in it. Well…..lemme take some stress off of your life and introduce you to my new friend. You can skip the cashews on this one and have a totally fat-free ranch or if you just ‘have to have’ the creaminess go ahead and indulge a little with the cashews.

Ingredients

2 medium potatoes

1/2 head of cauliflower

Optional: 1/4 C cashews - soaked in hot water for about 30 minutes prior to mixing.

Juice of 1 lemon or lime

1 tsp garlic powder or 1 garlic clove

1/2 tsp. Himalayan sea salt

1 tsp. onion powder

1 tsp of maple syrup or honey

1 tbsp of dill

1/2 tsp fresh chives (use less if using dried)

Directions

Peel and cut the potatoes into 1/2 inch cubes and rough chop the cauliflower.

Placed the potatoes and cauliflower in a steamer or pot of water and steam until fork tender. Set aside 1/2 C of steam water and save the rest to use while blending.

Allow everything to cool for a few minutes.

Toss in a blender with the lemon, honey, and seasonings. If using cashews, drain them and toss them in now as well.

Add the 1/2 C steam water and blend on high releasing steam periodically and being careful not to burn yourself. Blend on high speed until creamy. Add more steam water if needed for desired consistency.

This is a great addition when having my Cauliflower wings, baked potatoes, dipping your homemade fries with or just to drizzle on a salad or veggie tray. Enjoy!
